Allardice’s simple yet delicious scrambled eggs

The line-out specialist has another specialty in the kitchen with his simple, yet delicious, scrambled eggs. Enjoy this quick easy recipe to kick off your Sunday on the right note.
Ingredients:
Salt and Pepper
4 Eggs (2 per person)
1 tablespoon of Cream
1 tablespoon of Butter
Optional: Chives/parsley
Optional: Bread to toast
Method:
Based on the number or people you are wanting to cook for crack two eggs per person into a medium size mixing bowl. Season with salt and pepper and add a tablespoon of cream.
Once the eggs and cream are whisked the secret here is to leave to stand for 10 – 15 minutes. Leaving to stand allows the salt to make the eggs nice and fluffy.
Once the 10 – 15 minutes is up, pop down the toast in the toaster and pop your pan on a low heat. Add a knob of butter to the pan.
While the pan is heating, chop the chives.
Add whisked eggs to the heated pan, with your spatula move the eggs around as they cook.
Once they look like they are nearly cooked, the key here is to take them off the heat, turn off the element at this time.
Fold your chives into the scrambled eggs. Once you have folded the chives in, your ready to dish up.
A delicious option is to have avocado on toast and dish up the scrambled eggs on top and enjoy.
