Shooter Stevenson go to Banana and Chocolate Chip Muffin recipe

While the Gallagher Chiefs players are continuing to keep themselves active at home with their home gym setups and conditioning programmes. We look at what else is keeping them busy. Gallagher Chiefs back Shaun Stevenson has taken to the kitchen and has the perfect morning or afternoon snack for you in isolation.

Stevenson’s go to snack is banana and chocolate chip muffins.

Ingredients
2 eggs
1/4 cup oil (plain vegetable, soya or canola oil)
2 ripe bananas, peeled and mashed
1 cup low fat milk
3/4 cup soft brown sugar
2 1/2 cups plain flour
4 tsp baking powder
1 cup chocolate chips

Method
Preheat oven to 180°C on fan bake.

In a large bowl beat the eggs, oil, mashed bananas, milk and soft brown sugar all together.

Once the wet ingredients are mixed together, in a separate bowl mix the dried ingredients, flour, baking powder and chocolate chips.

Gently combine both wet and dry ingredients, making sure not to over mix.

Once combined, spoon into the prepared tins and bake for 15 – 18 minutes until puffed and golden brown.

Cool on a wire rack.

Tip: Always soak the muffin tins straight away, as soon as you’ve removed the muffins. This means the tins clean up easily and you don’t have to scrub at them and risk ruining their lovely shiny non stick surface.
