Ta’avao takes to the kitchen

Gallagher Chiefs and All Blacks prop and funny man Angus Ta’avao has added to his musical talents, this time taking to the kitchen to share his Hidden Veggie Fritters.

Ingredients:
1/2 cup flour
1 teaspoon baking powder
1 can of creamed corn
Pinch of salt & pepper
1 cup of grated or chopped veggies (in this recipe I use carrot, courgette, frozen peas and spinach, however any vegetable is fine)
2 eggs
Olive oil for cooking
Optional toppings: bacon, sour cream, sweet chilli sauce, avocado, tomato relish

Method:
First whisk eggs in a medium sized bowl.

In a separate bowl sift the dry ingredients, flour and baking powder and mix.

Add the whisk eggs, creamed corn, salt and pepper, to the dry ingredients and mix together.

Grate carrot and courgette, give a little squeeze in your palms to get rid of excess moisture. Roughly chop spinach and add into bowl with carrot, courgette and peas, folding into the mixture gently.

Heat a tablespoon of olive oil in a non-stick pan over medium-high heat.

Spoon fritter mixture into pan the size you feel like eating, flattening down slightly

Flip when bubbles start to appear on top and bottom is nice and golden.

Take out of pan once both sizes are golden. Top with whatever floats your boat, (avocado, sour cream, bacon and sweet chilli is a classic)

Finally you can stuff your face.
